On Sunday, October 20, for the lunch break of the Dust players of the Greif Tournament there will be a special service curated by Mr. Big.
Class of ’74 passionate about cooking from always with the predilection for BBQ and grilling, Mr. Big (alias Davide Bigarella), after a stay of 4 years in the States, falls in love with their cooking techniques. In recent years he has devoted himself in Italy to courses on BBQ and grilling, then refining the various techniques with quintals of ash to make it a real profession. Mr. Big is now proposed as a non-obvious alternative to make your best experience on embers.

– Mini-Porchette with bruscato bread (and caramelized onions): pork loin and bacon rolled with aromas and spices, cherry smoke. Onions, cabernet, salt, pepper, olive oil and cane sugar
– Pulled Pork (Paninazzo): smoked pork shoulder with cherry cooked at low temperature for 10 hours, cabbage salad, carrots and spring onion (with Greek yogurt and mayonnaise), BBQ sauce with sesame bun
– French Toast eggs and crispy bacon: bread toast breaded in the egg and cooked, eggs and bacon
– Spicy baked cherry tomatoes: cherry tomatoes, oil, salt, pepper, Tabasco, barricaded apple vinegar, cane sugar, worchestershire sauce
